Dill

Dill was also grown as a medicinal and aromatic herb in most monastery gardens. However, dill is far better known in the kitchen as a seasoning herb for fish.

Taste. The mild, herbaceous and light flavour of fine dill tips harmonises perfectly with delicate fish.

Effect. Dill is not often used in folk medicine, as there are much more effective herbs from the umbelliferous family (including aniseed, caraway and fennel). However, dill has an appetising, antispasmodic and partially antibacterial effect and aids digestion.
